Sweet Potato & Sesame Pizza

Let’s face it, you can’t really go wrong with pizza! It’s a fabulously flexible meal that lends itself to all sorts of experimentation. For the more spontaneous cooks amongst us, you can pretty much just see what you have in your fridge and create some weird and wonderful toppings. Alternatively, you can stick to tried and tested combinations.
Also a perfect meal to involve the kids. With our girls, it’s not just about the toppings but how they are presented; most of our pizzas end up with faces! Tomato slices make great noses, so we are told!
This pizza crust is a combo of vegetables, legumes, and seeds which yield high density nutrition. Wheat free, gluten free, yeast free, and grain free. A lot of ‘frees’ in there but don’t worry, it’s most definitely not fun free!
Ingredients
140 g (1 cup) sesame seed, finely ground
150 g (1 cup) sweet potato
equates to one half medium sweet potato
70 g (1/2 cup) chickpea flour
60 ml (1/4 cup) coconut oil
salt and pepper
toppings of your choice
Method
Preheat oven to 180 C.
Process all crust ingredients in a high-speed food processor until well combined.
Line a baking tray with parchment paper and spread out mixture as thick or thin as you like.
Bake for 20 minutes until golden and edges are crusty. (Spreading thinly works better.)
Add toppings and bake for another 5 - 10 minutes.
Cut into slices and enjoy warm.
