Raspberry Amazeballs

Ingredients

100 g (1 ¼ cup) rolled oats, finely ground

70 g (½ cup) raspberries, fresh or frozen

2 tsp vanilla bean paste

40 g (¼ cup) coconut oil

35 g (½ cup) desiccated coconut

3 medjool dates, pitted

 

 

Method

Place ingredients into a food processor one after another and blitz until combined.

 

Form one tablespoon portions into balls and roll in desiccated coconut.

 

Place in the fridge for at least one hour before enjoying.

 

Store in an airtight container for up to seven days or freeze for up to three months.

Any sweet-treat recipe that doesn’t require us to put on the oven and involves only a handful of ingredients is always going to be a winner in our house!

 

Even better when that handful of ingredients can be simultaneously chucked into a food processor for a few seconds.  Our girls still get excited about a good old raw ball and if it’s nut free and can accompany them to school, the excitement is even greater.

 

These raspberry amazeballs not only look pretty, they taste good too. A great recipe to get your little kitchen helpers assisting with.
