Goldilocks may well have been prepared to forego the bears’ porridge had she munched one of these oat bars before she went into
the woods.
 Bananas play a starring role in this story; rich in fibre, which helps keep little tummies fuller for longer, and loaded with nutrients such as potassium, calcium, magnesium, iron, folate, niacin, B6, manganese, and more. Perfect for an on-the-go breakfast or as a mid-morning snack. Not too sweet ….. just right! 

Ingredients

WET

135 g (1 cup) dates, pitted

65 g (cup) dessicated coconut

1 tsp vanilla essence

2 tbsp coconut oil

100 g (1 cup) super ripe banana, mashed

equates to one medium banana

 

DRY

40 g (½ cup) oats, rolled and ground into a
rough flour

100 g (1 cup) light spelt flour

1 tsp baking powder

pinch of salt

 

 

Method

Preheat oven to 160 C.

 

Grease a baking tray with coconut oil.

 

Combine wet and dry ingredients in two separate bowls before combining both into one mixture.

 

Place dough onto baking tray and smooth the top with a spoon until flat. Bake for 10 - 15 minutes or until top is golden.

 

Let cool and cut into bars.

 

Store in an airtight container for up to five days or freeze for up to three months.
