Oat & Berry Jam Slice

This egg free, gluten free oat slice is hearty and wholesome with just the right amount of sweetness. It makes a berrylicious dessert; teamed up with a dollop of cream or yogurt, you have yourself a real slice of heaven.  It’s a lunchbox treat that will t-OAT-ally excite your kiddos, and, given that it contains oats, we reckon you always get away with eating it
for breakfast.

Ingredients

200 g (2 cups) rolled oats, finely ground

100 g (1 cup) rolled oats

40 g (1/3 cup) coconut sugar

50 g (1/3 cup) butter / 80 ml (1/3 cup) coconut oil

50 g (1/4 cup) almond butter

400 g (4 cups) fresh or frozen berries (blackberries, boysenberries, mulberries, raspberries, strawberries)

2 tsp arrowroot powder

juice of half a lemon

 

 

 

Method

Preheat oven to 160 C and line a tray with parchment paper.

 

In a large bowl, combine ground oats, oats, coconut sugar, butter/coconut oil, and almond butter by hand. Rub the mixture between your fingers until well combined then form a ball with two thirds of the mixture. If too crumbly, simply add a bit of water or milk of choice. Reserve the other third to crumble
on top.

 

Press large ball of mixture into prepared baking tray. Use a rolling pin if necessary.

 

Place berries into a shallow bowl and combine with arrowroot powder and lemon juice. Use a fork to mash it all together and distribute over base layer. (Don’t worry, it will thicken during baking).

 

Lastly, crumble remaining oats over jam and bake for 15 - 20 minutes or until golden on top.

 

Let cool completely before slicing.
