Kale Chips

We didn’t think we could get away with writing a cookbook for little folk without being on trend and including what are probably, actually most definitely, the world’s healthiest chips!
Made exclusively with leafy greens like kale, kale, more kale.
This super simple and super tasty snack will leave you a fan (if not already) of this modern vegetable icon.
Once a bunch of hungry four-year-olds request a snack with the word ‘kale’ in it, you know it’s book worthy.
Ingredients
1 bunch kale (purple/green)
1.5 - 2 tbsp olive oil
2 tbsp nutritional yeast
2 tbsp desiccated coconut
1 tsp coconut sugar
1 tsp ginger, ground
Method
Preheat the oven to 120 C.
Wash kale and dry thoroughly. (Wet leaves result in soggy not crispy kale.)
Remove the stems, tear leaves into small pieces and massage them with olive oil before sprinkling with nutritional yeast, desiccated coconut, coconut sugar and ginger.
Line a baking tray with parchment paper and distribute greens evenly. You will most likely need two sheets.
Bake for 10 minutes and then rotate all leaves. Careful not to burn them – keep at a low temperature.
