Honey Nut Bites

Crunch... check. Chewiness… check. Sweetness… check. These bars have everything you want from a tasty snack. The only problem is it’s very difficult to stop at one!

 

The honey fairy waves her wand, casting a little magic over the other ingredients and creating a taste sensation that really does delight!

 

Honey has other magic powers we should mention: the many nutritional benefits that it brings with its yummy sweetness such as vitamins, trace enzymes, amino acids, and minerals like calcium, iron, magnesium, and potassium to name but a few. Teamed up with tahini, a complete calcium bomb, these two are a force to be reckoned with.

Ingredients

DRY

60 g (1/2 cup) cashews

60 g (1/2 cup) almonds

150 g (1 1/2 cups) oats

15 g (1 cup) puffed millet

 

WET

125 ml (1/2 cup) honey

125 ml (1/2 cup) tahini

30 ml (1/8 cup) coconut oil, melted

 

 

Method

Soak nuts in 500 millilitres (2 cups) of filtered water with one tablespoon of apple cider vinegar for a minimum of two hours/up to six hours. Then rinse thoroughly with fresh water. This will increase the digestibility of the nuts and remove any moulds and mycotoxins.

 

Preheat oven to 180 C.

 

Line a baking tray with parchment paper and roast nuts for 10 - 15 minutes until dry and crunchy.

 

Remove and let cool. Then add oats and toast for another 5 - 10 minutes. Be careful not to burn.

 

Meanwhile chop the nuts into small pieces and place into a bowl. Add cooled oats and puffed millet and pour wet ingredients over dry. Mix thoroughly until well combined.

 

Line a baking dish with parchment paper and pour mixture into it. Smooth top and refrigerate for at least 2 hours before cutting into bites, squares or bars.

 

 

Notes

You can slightly melt your wet ingredients together but please note that honey should never be cooked over 40 C as it causes a negative chemical change that makes it taste bitter. Heat also destroys the beneficial qualities of honey and it starts to resemble glue to the digestive tract.
