Green Pea Falafel Bites

Recipes / Snacks & Accessories

You don’t have to felafel (sorry!) about giving these to your kids; fun to make and perfect for a healthy afternoon snack or lunchbox filler.

250 g (2 cups) fresh green peas, shelled
(or frozen peas, defrosted)

200 g (1 cup) chickpeas, cooked

25 g (1 cup) parsley, fresh

30 ml (⅛ cup) olive oil

½ tsp cumin, ground

½ tsp coriander, ground

salt and pepper

75 g (½ cup) chickpea flour

Preheat oven to 180 C.

Line a tray with parchment paper.

Combine all ingredients in a high-speed food processor and pulse a few times until you have a rough paste. Slowly add chickpea flour at the end or processing. The dough should not be very sticky.

Form little balls in desired size with your hands and lay out on baking tray.

Bake until very crispy for up to 45 minutes. Flip them halfway through cooking time so all sides are
well done.
