Gingerbread Star Pops

Have fun with cookie cutters and this gingerbread dough which can be cut into any shape you fancy. A snack on a stick which is packed with goodness and health benefits thanks to the hearty buckwheat grains and goji berries – a sure-fire way to keep yourselves on track for a very berry Christmas!

Ingredients

100 g (1 cup) dates, pitted, and soaked for
10 minutes

80 g (½ cup) almonds

50 g (¾ cup) desiccated coconut

1 tsp fresh ginger, grated

1 tbsp gingerbread mix/Chinese Five Spice

40 g (¼ cup) buckwheat, raw

20 g (¼ cup) goji berries, dried

 

 

Method

Combine dates, almonds, desiccated coconut, and spices in a high-speed food processor and mix until smooth.

 

Add the buckwheat kernels and goji berries by hand, form into a ball, and then roll out between two parchment paper sheets. Refrigerate for 20 minutes for easier handling.

 

Use a cookie cutter of choice (e.g. star/reindeer/santa) and cut out desired shapes. Alternatively you can simply form little balls with your hands.

 

Refrigerate for at least an hour before serving.
