Eskimo Snowballs

There’s ‘snow’ seed quite like the hemp seed when it comes to health benefits and these little Eskimo snowballs boast a whole heap of hemp seeds.
Don’t’ worry we are talking safe zone hemp here, the most nutritious seed in the world. They are a perfect blend of easy-to-digest proteins, essential fats (Omega 3 & 6), Gamma Linolenic Acid (GLA), B vitamins, vitamin D, vitamin E, antioxidants, amino acids, fibre, iron, zinc, calcium, magnesium, potassium,
to name but a few.
All in all, they make these little snowballs the perfect snack for refuelling our little Eskimos and, the best thing is, they are lunch box friendly!
Ingredients
250 g (2 cups) dates, pitted
100 g (1 cup) desiccated coconut
150 g (1 cup) sesame seeds, finely ground
50 g (1⁄2 cup) rolled oats
60 g (1⁄2 cup) hemp seeds
50 g (1⁄2 cup) hemp protein powder
15 g (1⁄8 cup) flax seeds, finely ground
30 g (1⁄2 cup) raw cacao powder
90 ml (1⁄3 cup) coconut oil
1 tsp vanilla essence
Method
Combine all ingredients one by one in a high-speed food processor and pulse a few times until you have a rough paste. Do not over-process to keep a little crunch.
Form small balls or press into a mold (egg cups are perfect!) and sprinkle with desiccated coconut. Then refrigerate to set.
Alternatively, line a baking tray with parchment paper and press dough into form until even. Refrigerate for at least two hours before cutting to desired size.
Store in an airtight container for up to seven days or freeze for up to three months.
