Eggplant Mini Pizzas

All kiddiewinks love donning their aprons and taking charge of pizza toppings and all mummies love time savers.

 

No knead (sorry, couldn’t resist!) for dough, simply slice eggplant into rounds then let your little helpers bring these mini pizzas to life with their favourite herbs and toppings.

 

 

Ingredients

1 large eggplant, cut into 1 cm rounds

4 mushrooms, sliced

6 cherry tomatoes, quartered

10 - 12 black olives, sliced

125 ml (½ cup) tomato sauce

herbs (thyme, basil, oregano)

salt and pepper

pepitas to sprinkle

olive oil

 

 

Method

Preheat oven to 200 C.

 

Lightly brush both sides of eggplant rounds with olive oil and place onto a parchment paper-lined baking tray.

 

Bake for 20 minutes.

 

Remove the baking tray, and top the rounds however desired (sauce, cheese, vegetables, etc.).

 

Place the tray back into the oven for about
10 minutes, until toppings have cooked through.
