Brown Rice Chia & Choc Pudding

This comforting bowl of goodness is a healthier spin on your traditional rice pudding. It’s hard to believe that five simple ingredients create such a deliciously creamy, belly-filling, soul-soothing, guilt-free snack. You are most definitely allowed to come back for seconds!
Ingredients
400 g (2 cups) brown rice, cooked
equates to 130 g (¾ cup) uncooked rice
30 ml (⅛ cup) coconut oil
40 g (¼ cup) black chia seeds
20 g (¼ cup) raw cacao powder
8 dates, pitted
Method
Wash rice and soak in plenty of fresh water overnight. Rinse thoroughly and boil in 750 ml (3 cups) or more water until creamy. Let cool.
Soak dates in hot water for 5-10 minutes.
Place dates, coconut oil, chia seeds, raw cacao powder and half of the rice into a high-speed food processor.
Then combine chocolate mixture with remaining rice by hand to give the pudding a bit of texture.
Let set in fridge for at least two hours before serving.
Top with seasonal fruit.
Store in an airtight container for up to one week.
