In your best Mary Poppins voice, all together now… ‘for a spoonful of chia helps the energy stay up!’ Ok, so it’s not lyrically the best but true nonetheless. Nutrient-dense and full of energy-boosting power, chia means ‘strength’ in the Mayan language. Aztec warriors apparently ate these super seeds to increase their energy and endurance and one spoonful is said to have kept them going for 24 hours.
This egg-free, sugar-free version of custard is a little sweet treat that lends itself to being as simple or as decadent as you fancy. Our kiddos like to mix it up with different toppings (berries, seeds, nuts) and have been experimenting with other flavours (cacao and cinnamon have been favourites so far). Minimal ingredients, minimal preparation, scrummilicious result. Bearing in mind the energy boosting effect, it may be best not to feed this to your little ones too close to bed time!
Ingredients
240 ml (1 cup) coconut milk/milk of choice
100 g (1 cup) banana
2 tbsp raw cacao powder
equates to approximately one medium banana
2 tbsp honey
1 tsp vanilla extract
60 g (1/3 cup) chia seeds
Method
Place all ingredients except the chia seeds in a food processor and blitz until smooth. By hand mix in the chia seeds.
Pour the mixture into whichever cups or dishes you will serve the custard in and allow to set in the fridge for a minimum of two hours.
Add toppings of your choice and enjoy.
Notes
For a hint of cinnamon add 1 teaspoon of cinnamon.
